First off, I'm against the remake of any film unless it's either by the director and producers of the original version or with their express permission. Remakes typically bomb at the box office and are rarely, rarely accepted or liked by reviewers or audiences.
I am especially against remaking any of the Star Wars features because, for one, the originals are considered classics in their own right, even coming under cult status if you think about it. Quentin might be a fine director and creative mind, but I don't think he has any business in Star Wars unless it were to make an original feature of his own...
That said, I don't particularly have a favorite film. I suppose Mr. Holland's Opus is the one that comes to mind first, but it's one I can't see anyone being interested in redoing.

Casablanca. or possibly Gone With the Wind.
They should not be remade. They're CLASSICS for crying out loud!!
*gives Ted Turner the evil death glare for having Casablanca colorized*

More to the point, which films should never have been remade, and which producers and directors should be hogtied and horsewhipped for such transgressions?

The reason they are my fave films are usually because they haven't been hashed up by being remade

Oceans Eleven is a film made recently, within the past three years, that is based upon the original film but doesn't try to reproduce it or tell the story in quite the same way.
Adaptations of old films are one thing, but take the new Psycho that came out a few years ago -- as I recall, the director of that film tried to reproduce the exact same camera angles, dialogue, and action as the original. Anne Hesche just couldn't reproduce the magic of the film with the famous scream that made the original so captivating.
