depends on what you are turning them down on, otherwise i usually go with the following.
"Thanks for the <offer>, but i'm not ready for <insert offer here> just yet <offer explination here with regards to why> <hint at prospect int he future>
So an example would be
"Thanks for the cake, but i'm not ready for the cake just yet, i'm full up from the dinner. maybe i'll ahve some when i've digested the dinner"
Does that make sense? =(
